- 1 cup quinoa (rinsed)
- 1 shallot (minced)
- 3 cloves garlic (minced)
- 2 3/4 cups chicken stock (all natural chicken stock, make sure there is no sugar in the ingredient list, you can also use vegetable stock or beef stock)
- 1/4 cup coconut milk (or cream, I like Golden Star coconut milk and Savoy coconut cream because both brands are preservative-free)
- 1/2 cup cheddar cheese (grated, I like Montchevré goat cheddar [note: the cheese here can be optional to keep the dish dairy-free])
- 16 oz. baby bella mushrooms
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 1/4 tsp. rosemary
