- 1 eggplant (Diced, rinsed, halved, deseeded and very finely chopped)
- 1,333 cups paneer cheese (chopped into cubes)
- 2 cups spinach (rinsed, drained and sorted)
- 1 red pepper (rinsed, halved, cleaned and chopped)
- 3 spring onions (rinsed, cleaned and chopped)
- 2 cloves garlic (peeled and finely chopped)
- 1 green chili pepper (rinsed, halved, deseeded and finely chopped)
- 4 Tbsp. oil (Soy bean)
- 1/2 tsp. lemon zest (finely grated)
- 1/2 cup ricotta cheese
