  • 1 1/2 quarts water
  • 1 head cauliflower (separated into florets, about 5 cups)
  • 1 clove garlic (peeled, optional)
  • 1/4 cup Hellmann's or Best Foods Real Mayonnaise
  • 1/4 teaspoon salt
  • 1 tablespoon fresh basil leaves (chopped, optional)

    1. In 3-quart saucepot, bring water to a boil. Add cauliflower and garlic and cook covered 15 minutes or until florets are tender; drain.
    2. In food processor or blender, process cauliflower, garlic, Hellmann's® or Best Foods® Real Mayonnaise and salt until creamy, scraping down sides as needed. Stir in basil and serve immediately.

    They were a little runny but I think that was a rookie mistake with the food processor and the first time making this dish. I will definitely try again.

    Great recipe! We've made this twice now and really love it. I half the Mayo and add a couple tbsp butter. Also don't include the basil.
