- 3 garlic cloves (minced)
- 1 head cauliflower (about 3-4 pounds, trimmed and separated into florets)
- 8 oz. Morningstar Farms® Meal Starters™ Chik'n Strips (package, thawed, and cut into bite-size pieces, feel free to substitute seasoned seitan)
- 2 Tbsp. palm oil (or dende , if you can find it; omit if not)
- 1/2 cup roasted cashews (lightly salted and, halves and pieces)
- 1/2 cup roasted peanuts (lightly salted and)
- sea salt
- freshly ground pepper
- 4 Tbsp. extra-virgin olive oil (or peanut oil, divided)
- 1 onion (medium, finely chopped, about 1 cup)
- 2 whole scallions (sliced, about ¼ cup)
- 15 oz. diced tomatoes (can fire-roasted)
- 1 pkg. coconut milk (So Delicious Dairy Free Original Culinary, equivalent to 1 15.5-ounce can coconut milk)
- 1 1/2 cups chicken stock (no-, vegan chicken stock or vegetable stock)
- 1/4 tsp. turmeric (if not using dende oil, use 1 teaspoon)
- 1/8 tsp. smoked paprika (if not using dende oil, use ½ teaspoon)
- 1/2 cup fresh chopped cilantro (for garnish, optional)
- 4 cups cooked rice (or faro, optional)
