- olive oil (good quality, for cooking)
- 2 onions (minced)
- 4 cloves garlic (minced)
- 500 grams butternut squash (peeled, and cut into bite-sized cubes)
- 1/2 cabbage (your choice: green, Savoy, or red, approx. 450g/1 lb, cut in quarters, and finely sliced)
- 4 cups kale (finely sliced organic, I used Lacinato kale)
- 2 cans diced tomatoes (organic)
- 2 cans cannellini beans
- 10 cups water (or low sodium broth, vegetable or chicken)
- 4 low sodium bouillon cubes (if using water and not broth, vegetables or chicken, I used 2 of each)
- 2 tsp. oregano
- 1 tsp. chili flakes
- 2 tsp. sea salt (grey)
- black pepper (to taste)
- fresh parsley (chopped, on top)
- croutons
- 4 slices crusty bread (fresh, I used organic spelt bread)
- 1/4 cup olive oil (good quality)
- 2 pinches sea salt
- 3 pinches black pepper (or about 8 turns on your pepper mill)
- 3 herbs (finger pinch of Herbes de Provence, or dry oregano)
- 1/8 tsp. garlic powder
