- curd (rhubarb hibiscus)
- rhubarb (roasted orange)
- fresh mint
- 6 large egg whites (room temp)
- 1 pinch cream of tartar
- 1 1/2 cups sugar (super fine, I whiz granulated sugar in my bullet first and then measure)
- 1 1/2 tsp. cornstarch
- 1/8 tsp. salt
- 1 tsp. white wine vinegar (i used white balsamic)
- 1 1/2 tsp. vanilla
- 1/4 cup hibiscus flowers (dried)
- 2,250 oz. rhubarb (grams fresh or frozen, if fresh, throw out the leaves and any rough bits)
- 15 grams hibiscus flowers (dried, approx 1/2 cup)
- 2/3 cup sugar
- 4 large eggs
- 4 Tbsp. butter (cold, cut up)
- 680 grams rhubarb (discard leaves and any rough bits)
- 1/2 cup sugar
- 1 Orange (large)
