- 1/4 tsp. juniper berries (ground)
- 2/3 cup nonfat milk powder (or textured soy protein)
- 1 Tbsp. liquid smoke (use if poaching, not smoking, the dogs)
- 3/4 cup rye flour
- 3/4 cup milk (warm, 110 degrees F)
- 1/4 cup onion (pulverized like an onion smoothie)
- 3 Tbsp. honey
- 2 Tbsp. unsalted butter (at room temperature)
- 1 Tbsp. instant yeast
- 3 cups bread flour (or all-purpose flour, plus more as needed)
- 3/4 cup warm water (110 degrees F)
- 1 Tbsp. caraway seed (slightly smashed)
- 2 tsp. kosher salt

- 1/2 jalapeno chilies (small, minced but not deseeded)
