Description
If you’ve ever wanted to create the decadent, crispy, succulent orange chicken that’s so popular at Chinese-American restaurants, try this version in your home kitchen! The restaurant dish gets its name from a more traditional Chinese dish called orange peel chicken or tangerine chicken. In the classic version, dried tangerine peel flavors the sauce, but in the U.S., restaurant cooks tend to substitute orange juice and boil it down to a syrup. Here, we combine orange juice and fresh orange zest for a bright, citrusy sauce. Hoisin sauce and honey add just the right amount of sweetness. Taking a few extra minutes to fry the chicken a second time is key to the crispy texture. The recipe is a Yummly original created by Diana Kuan.
Ingredients
- 3 cloves garlic
- fresh ginger (1 small piece, enough for 1/2 tsp. grated)
- 4 scallions
- 3 oranges (large, or use 1 fresh orange for zest plus 1 1/4 cups store-bought orange juice)
- 1/3 cup chicken broth
- 3 Tbsp. hoisin sauce
- 3 Tbsp. honey
- 2 tsp. apple cider vinegar
- 1 tsp. toasted sesame oil
- 1 1/2 lb. boneless, skinless chicken thighs (or chicken breasts)
- vegetable oil (for frying, at least 3 cups if frying in a wok or 8 cups if frying in a Dutch oven)
- 3 large egg whites
- 1 1/2 cups cornstarch
- 2 tsp. salt
- 1 1/2 Tbsp. vegetable oil (for stir-frying)
- 2 tsp. sesame seeds
Directions
- Finely chop garlic. Peel ginger and grate it until you have about 1/2 tsp. Slice scallions into 1/4-inch thick pieces, separating the white stalks and green tops. Set vegetables aside.
- Prepare sauce: Grate enough zest from an orange to make 1 tsp., and squeeze 3/4 cup juice. In a small bowl, stir together orange juice and zest, chicken broth, hoisin sauce, honey, vinegar, and sesame oil. Set sauce aside.
- Cut chicken into 1-inch pieces, then set aside.
