- 1/2 tsp. salt (adjust per taste)
- 1 1/2 lb. chicken (boneless chicken thigh, cut into 2-3 inch cubes)
- 3 Tbsp. cilantro (chopped fresh leaves, for garnish, optional)
- 2 Tbsp. heavy cream (adjust per taste)
- 3 Tbsp. unsalted butter
- 1/2 cup red onion (medium onion, sliced to thin half-moon slices)
