- 2 potatoes (large, peeled and quartered)
- 3 lb. beef shank (/chuck/rump see notes - cut into large chunks)
- 1/4 stalk lemon grass (fresh)
- 6 kaffir lime leaves (fresh, tear each leaf a bit to release flavor)
- 1 turmeric (leaf optional)
- 4 fresh bay leaves
- 500 mL coconut cream
- 200 grams cayenne pepper
- 2 star anise
- 1/4 tsp. ground cloves
- 1 tsp. nutmeg (powder)
- 1 Tbsp. coconut sugar (peeled, or about 3 tsp ground turmeric powder)
