- 1 medium onion (grated or finely chopped in a mini food processor, 1 cup)
- 1 large carrot (peeled and shredded, 1/2 cup)
- 1 cup shredded cheese (I used a sharp cheddar-Monterey Jack blend)
- 1 cup raisins
- 1 cup crushed pineapple (drained)
- 1/4 cup panko bread crumbs
- 1/4 cup banana (or tomato ketchup)
- 3 eggs (beaten)
- 1 1/2 tsp. salt
- 1 tsp. freshly ground black pepper
- 3 hard boiled eggs (peeled)
- 2 Tbsp. mayonnaise
- 2 Tbsp. butter (melted)
