- 1 large yellow onion (diced medium)
- 1 red bell pepper (seeded and diced medium)
- 3 cloves garlic (minced)
- 2 Tbsp. chili powder
- 1 1/2 lb. sweet potatoes (cut into ¾ inch chunks)
- 1 cup red lentils
- 1 tsp. salt
- 4 cups vegetable broth
- 30 oz. kidney beans (drained and rinsed)
- 2 Tbsp. Thai red curry paste
- 15 oz. lowfat coconut milk
- 28 oz. diced tomatoes
- 1/2 cup fresh cilantro (plus extra for garnish)
- limes (for garnish, optional)

Delicious! I simmered it on low heat longer to let the flavors meld more I also used half red and half brown lentils and it’s still good

Great, I used pablano pepper in place of red bell pepper. I blended the diced tomatoes before adding them to the chilli. I added the Thai curry paste after adding the veggie broth. I also simmered it much longer than suggested.
(About 1 1/2 hours.

Turned out great - made it for my boyfriend who is vegan and he raved about it. The flavor combination is unexpected but works amazingly well. Very easy to make - will definitely make again - this is one I'm bringing to parties.

Very good. only put one tablespoon of red Thai curry, otherwise would be too spicy for me. but will make again.

Absolutely delicious! I cut down the amount of bell pepper, sweet potato and onion that I used and added shrimp for some meat. Will definitely fix again.

It turned put great. I was on a family trip and everyone loved it. My brother and his wife whobare both on a plant basedndiet bpth said it was the best meal that they've had the entire trip, they already called dibs on the left overs. I did cook up some shredded chicken breast for those that prefer a little meat in their chili. Also i found the recipe to be a little bland for my taste so i added a little extra red curry paste and chili powder to the recipe. I will definitely be making this again.

Really tasty and simple.
But the recipe didn't describe how to properly cook the beans, which made for a much longer cooking time than it said.

Tasty. Definitely needed some zest to brighten up the flavors, in my case I used the recommended lime.

Easy to modify and customize. Had some leftover carrots and spinach who joined the party. Dialed up the spice alot with sriracha, chili flakes, cayenne. Its gonna be a good week eating this.

I make soup every week of the year. This will be one of my top favorites!!!
I increased the chili powder and red curry paste and only used 1/2 can of
coconut milk (sometimes coconut milk flavor is too much).
Other than that, very tasty and hearty.

-This turned out great. Followed recipe and instructions exactly as stated and was perfect. Looking forward to tomorrow to see how the flavors come together further. It does make a lot so no need to double if your looking to have leftovers
-Made this again and next time I will go lighter on the pepper. It can get spicy.

Tasty. I would make this dish again and for others. I think I would add some extra curry paste but obviously that's a taste thing. Highly recommend the lime.
