I used quinoa instead of aborino rice and it came out REALLY well. Goat cheese and a TON of extra basil mixed throughout, not just sprinkled on top.

Fine but boring, I added 3 large tablespoons of garlic Italian seasoning (garlic, onion, etc) and red onion, and actually caramelised the mushrooms (with demerara sugar) in stead of just frying them. After that it was very nice
