- 2 cups red wine (preferably a good-quality red Bourdeaux Cabernet Sauvignon, or Merlot)
- 1 cup grape juice
- 1/2 cup tapioca pearls (it's naturally gluten-free)
- 3/4 cup sugar
- 1 cinnamon stick
- nutmeg (*A pinch ground fresh)
- 1 pinch ground cloves
- 1 Orange (zest, my preference or lemon)
- 1 Tbsp. fresh orange juice (either, or lemon according to the zest of the fruit used)
- 1 Tbsp. cornstarch
- 1 1/4 cups milk (divided, for a dairy-free version, use a lactose-free milk)
- 1/4 cup sugar
- 2 egg yolks
- 1 tsp. vanilla bean (or 1 vanilla extract split lengthwise)
