I followed the directions exactly. I got up early to start the roast and got increasingly excited throughout the day as the smell was so enticing. The meat came out very dry. The sauce was good. The carrots were tasty. It is not unlike other recipes I've come across for this type of meal but this one takes a lot more time and was not worth the time and effort
