Ready to eat in no time, this red velvet pancake recipe includes pancake mix, unsweetened cocoa powder, buttermilk, McCormick® All Natural Pure Vanilla Extract, cream cheese and the star ingredient: McCormick® Red Food Color. These vibrant pancakes are easy to make and require minimal cleanup. First, preheat your griddle or skillet. While waiting, mix the dry pancake ingredients in a large bowl until well combined, then add the remaining ingredients until blended. For light and fluffy pancakes, pour a dollop of batter onto the skillet for a minute or two, flipping once bubbles appear. While the pancakes are golden, mix the Cream Cheese Topping so it’s ready to serve. Ingredients
- 2 cups pancake mix
- 2 Tbsp. unsweetened cocoa powder
- 2 Tbsp. granulated sugar
- 1 cup buttermilk
- 2 eggs (lightly beaten)
- 1 Tbsp. McCormick Pure Vanilla Extract
- 1 1/2 tsp. red food color (McCormick®)
- 4 oz. cream cheese (softened)
- 1/2 cup confectioners’ sugar
- 1 Tbsp. milk
- 1 tsp. McCormick Pure Vanilla Extract
- 1 cup pancake syrup
- 1 tsp. McCormick Pure Vanilla Extract
- 1/4 tsp. McCormick Cinnamon (Ground)
Directions
- Mix pancake mix, cocoa powder and granulated sugar in large bowl until well blended. Stir in buttermilk, eggs, vanilla and food color just until blended.
- Pour 1/4 cup of batter per pancake onto preheated lightly greased griddle or skillet. Cook 1 to 2 minutes per side or until golden brown, turning when pancakes begin to bubble. Serve pancakes with Cream Cheese Topping or Spiced Syrup, if desired.
- For the Cream Cheese Topping, mix cream cheese and confectioners’ sugar in small bowl until well blended. Stir in milk, a little at a time, until smooth. Stir in vanilla.
- For the Spiced Syrup, mix pancake syrup, vanilla and cinnamon or pumpkin pie spice in microwavable bowl or measuring cup. Microwave on HIGH 1 to 2 minutes or until warm, stirring once.
