Thought is was about time I rated this. I make it all the time it’s so delicious and filling. Once I was lazy and bought tinned corn, huge mistake. Fresh corn is a must 👌🏼

This was a GREAT recipe for finally trying out the red quinoa that's been sitting in my cupboard for the past two months! I didn't run into the same problem using frozen corn, and while using the freshest ingredients possibly is always recommended, sometimes they are simply not available or cost prohibitive. Nevertheless, this recipe still kicked butt with frozen ingredients. Can be eaten warm, room temperature or cold.

I love this recipe! SO good with chips and salsa. Would not change anything. you can make in mason jars for keeping cold.
