- 1/2 tsp. salt
- 4 beets (small, red or golden, or combination)
- 3 large carrots (peeled and cut into 1/2 x 4 inch sticks)
- 1 Tbsp. olive oil
- 1 Tbsp. honey
- 1 orange (large, zest plus 1 tablespoon juice for dressing)
- 1/8 tsp. nutmeg
- 1/2 tsp. salt
- pepper (to taste)
- 1 avocado (peeled and diced)
- 4 cups watercress (or 4-6 cups mixed spring salad greens)
- crumbled goat cheese (optional)
- toasted nuts (optional)
- raisins (optional)
- 1 Tbsp. orange juice
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. honey
- 1 tsp. orange zest
- 1/2 tsp. Dijon mustard
- 1/2 tsp. minced garlic
