- 250 grams Camargue red rice
- white rice
- wild rice
- 8 chicken thighs (bone in and skin on)
- 1 jar pesto sauce
- 500 mL boiling water
- 1 tsp. vegetable bouillon (optional, for extra flavour)
- 1/2 red pepper
- 1/2 yellow pepper
- 20 grams black olives (stoned and chopped - optional)
- 20 grams raisins (I ran out of raisins so I used dried apricots)
- 1 tsp. spanish paprika (Smoked, to sprinkle over the chicken thighs)
- 1 bunch parsley (chopped)
- salt
- pepper
