- 1 lb. andouille sausage (cut into 1/2-inch pieces)
- 1/2 lb. smoked meat (Tasso, cut into 1/2-inch pieces)
- 1 Tbsp. paprika
- 3 Tbsp. seasoning (Emeril's Bayou Blast, or other Cajun or Creole Seasoning, store bought or homemade, of choice, See Box Below for Links to Recipes)
- 2 tsp. gumbo file (ground)
- 1 tsp. ancho pepper (ground)
- 10 cups chicken stock (cold, or Broth)
- 2 Tbsp. brown sugar
- 2 bay leaves
- 1/2 lb. shrimp (cleaned, peeled, deveined and tails removed)
