I made two versions: one with frozen chopped spinach rather than fresh. For a variation I used the base recipe minus the spinach and sauted carrots and parsnips first before adding the rest of the ingredients, also bumped up the spices. Both were good, but my version with root vegetablea was killer!

They were really good! Will make again, added purple sweet potatoes and it came out great!

Really good! I used low-fat coconut milk and it turned out great. Recommend using coconut oil instead of olive oil to help enhance the subtle coconut flavour.

Wow - I wasn’t expecting this to be so good! I doubled the spices and also added some crushed red pepper flakes. I made some substitutions based on what I had like a yellow onion instead of red. I used 2 small Thai chilis instead of a serrano pepper - I kept the chilis whole. I used fire roasted diced tomatoes with green chilies. I had half a can of lite coconut milk so I supplemented with some almond milk. I added one cubed Russet potato before adding the lentils. I had to add more water while cooking.

Delicious! I used low fat coconut milk and it still turned out amazing. I definitely will make this again soon! YUM

Tasted great, and it wasnt hard at all to make it.
Though, I added 1 tsp of cayenne powder and used yellow lentils instead of red.

this is my 4th or 5th time making this recipe and it turns out great every time. occasionally I'll substitute the spinach with broccoli and I'll thrown in some bulgur wheat too. Love the flavors and spices with some garlic naam bread. DELICIOUS!!!

So Yum, I used a blender stick, used more lentils and spinach and mushrooms and used this as a unique dip for my son and daughter in laws engagement. Went down a treat!

This recipe is awesome! Made it a few times now and enjoy it even more each time.
I would suggest including a little bit of salt and maybe double the other spices.
But its really easy, relatively quick and really yummy!

This was so easy to make and was great! The coconut flavor was perfect. I followed the previous reviews and doubled the spices and ginger; added mushrooms too.

Came out tasting like a Thai style coconut curry. Very tasty when you salt it to your taste. In the future I might add some more water when I add the tomatoes and cook a little longer to soften the lentils. I think I cooked it down to much, but the lentils were a little hard.

So delicious!! I did also add more of each spice as well and used some kale too because that's what I had. So tasty and so filling! Would definitely make it again

I'm trying to become a vegetarian and this was one of my first dishes after a 21 day cleanse that helped set the stage. I really enjoyed it and did follow the comments to add extra seasoning. I was hoping the lentils would be smoother but I loved the texture the spinach gave it. I'll definitely make this again.
