- 1/2 cup yellow onion (or finely chopped white)

- 1/2 tsp. cumin seeds
- 1/2 tsp. fennel seeds
- 1/2 tsp. mustard seeds
- 1/2 tsp. fenugreek seeds
- 1 bay leaf
- 1 tsp. turmeric
- 1 tsp. kosher salt (plus more to taste)
- 1 lime (juiced, about 2 tablespoons fresh lime juice)
- 8 sprigs cilantro (de-stemmed and chopped)
