  • 1 1/2 Tbsp. red curry paste (or to taste)
  • 2 Tbsp. fish sauce
  • 2 Tbsp. palm sugar (grated)
  • 1 Tbsp. tamarind concentrate
  • 2 kaffir lime leaves
  • 800 mL coconut milk
  • 1/2 pineapple (small, about 1kg, peeled, halved lengthways, cored and cut into 7mm-thick slices)
  • 1 duck (Chinese barbecued, chopped)
  • 1 red chilli (fresh long, seeded and thinly sliced, to serve)
  • jasmine rice (To serve: steamed, and snowpea shoots)
