- 1/2 cup sliced carrots (thinly)
- 1/4 cup fresh cilantro (chopped)
- 4 red chillies (small, dried or fresh)
- 2 handfuls rice noodles (pad thai style)
- juice (a lime)
- 7 carrots (mini, thinly sliced, reserve a couple of pieces to garnish, optional)

Delicious soup.....I added 2” pc of grated ginger,6 garlic cloves grated and 2 T fish sauce. Thinly sliced beef is good too.

Delicious! Used soy curls. Cut down coconut milk to 2 cans and 1 can water. Skipped the noodles, had none and added 2 handfuls med. white Calrose rice.

Very good. I love Thai food and this hit the spot! The only thing I changed was to use green Thai peppers that I had on hand Thanks for a yummy recipe.
