- 1/2 cup apple cider vinegar

- 1 Tbsp. fresh ginger root (chopped)
- 1 tsp. Dijon mustard
- 1/2 tsp. Diamond Crystal Kosher Salt

- 1 red cabbage (small, cored and thinly sliced, about 2 pounds)
- 2 carrots (julienned or peeled into thin strips)
- 2 scallions (greens only, thinly sliced)
- 1/4 cup fresh cilantro (minced)
- 1/2 cup dressing (Carrot Ginger, see above)
- 2 Tbsp. toasted slivered almonds
