- 13.5 oz. sausage (JOHNSONVILLE® Smoked Rope, cut into coin-slice pieces)
- 1 Tbsp. vegetable oil
- yellow onion (chopped)
- 1 cup chopped celery
- garlic (cloves, minced)
- Cajun seasoning (or tablespoons Creole)
- 1 tsp. hot sauce
- bay leaves
- 1 qt. chicken stock
- red beans (pound Camellia Brand, sorted and soaked overnight)
- 1 tsp. kosher salt
- 1 tsp. white pepper
- 1 cup chopped parsley
- 1 cup cooked rice (for serving)
- green onions (cup chopped)

Directions
- In a large stock pot, cook and stir the sausage, onion and celery in oil over medium-high heat until onion and celery are tender; about 8 minutes.
- Add garlic; cook and stir 1 minute.
- Add Creole seasoning and hot sauce. Cook and stir for 1 minute. Add bay leaves; cook and stir for 1 minute.
