- 1 lb. red beans (dried, rinsed)
- 1/2 lb. andouille sausages (quartered and thinly sliced see Recipe)
- 1/2 lb. smoked ham (diced)
- 1 cup white onions (finely diced)
- 1 cup celery ribs (finely diced)
- 1/2 cup green peppers (finely diced)
- 1/2 cup red peppers (finely diced)
- 3 cloves garlic (pressed)
- 1 Tbsp. chili powder
- 1/2 Tbsp. Creole seasoning (see Recipe)
- 1/2 Tbsp. brown sugar (such as demerara)
- 1 tsp. smoked paprika
- 1 tsp. ground cumin
- 1/2 tsp. cayenne pepper
- 1/2 tsp. freshly ground black pepper (I always use mixed peppercorns, or more to taste)
- 2 1/2 cups low sodium chicken broth
- 2 1/2 cups low sodium vegetable broth
- 2 bay leaves (large)
- 1/2 tsp. sea salt (ground Himalayan, or to taste)
- 2 1/2 cups water
- 1 cup basmati (long grain such as, jasmine or American long-rice, washed and drained)
- 1 Tbsp. butter (tips & tricks)
- 1 Tbsp. green onions (green parts only, sliced)
