I have to admit, I was skeptical about jam made of bacon. Wow. My skepticism was utterly unfounded. This recipe is phenomenal. The finished jam was so amazing my mouth is watering as I write this review. I plan to make more just as fast as I can. My only addition to the directions is that letting the jam chill overnight takes it to another level. If you can resist that long, it's worth the wait.
