- 1 pkg. bison (Force of Nature, /Beef Breakfast Sausage, 14 oz, or similar product of choice)
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tsp. red pepper flakes
- 1 tsp. thyme (leaves only, finely chopped)
- 1 tsp. rosemary (leaves only, finely chopped)
- 4 Tbsp. tomato purée
- 1 lemon
- 1 egg (beaten in small bowl, set aside)

- 1 tsp. mustard (choice)
- 1 cup chestnuts (precooked and finely chopped, such as Matiz Organic Chestnuts here)
- 1/2 cup breadcrumbs (packaged pre-made, or about 4 slices of Italian loaf, toasted)
