- 1 large onions (chopped)
- 2 jalapeño peppers (chopped)
- 1 bell pepper (small, or sweet pepper, chopped)
- 1 chili peppers (spicy, chopped, I used a Devil’s Tongue from my garden – try a habanero or ghost pepper – optional for a nice and extra spicy chili)
- 4 cloves garlic (chopped)
- 2 cans red kidney beans
- 42 oz. fire roasted tomatoes (or use equivalent fresh, You can also used diced tomatoes or tomato sauce)
- 2 Tbsp. ancho powder
- 2 Tbsp. guajillo chile pepper
- 1 Tbsp. salt
- 1 tsp. ground cumin (freshly)
- 1 tsp. chili flakes (red)
- salt (to taste)
- pepper (to taste)
- jalapeño (Sliced roasted, for serving)
- chili flakes (spicy, for serving)
- chopped parsley (fresh, or cilantro, for serving)
