Needed extra olive oil to keep the Vitamix from cavitating and to get the creamy texture I wanted. I added some dried roasted red bell peppers and extra garlic. It tastes great and will likely taste better tomorrow! Wish I had added a bit more salt and pepper to offset the sweetness of the cashews - but I’m letting it sit overnight to see if the flavors blend more before I do that. Seems like a perfect replacement for a bean hummus if you are avoiding legumes.

My husband and I are going raw for the first time. I used this as a replacement for cheese in a raw lasagna. OMG. Thank you for sharing !
