I made this, and it was pretty good. I added ginger for an extra zing! The one issue I have is that, because of the coconut oil, it hardens when refrigerated. Flavor-wise, it has good flavors, but I added a touch more sweetener because it needed it. The next time I make it, I will add fresh ginger to the almond butter blend. Also, what other oil would you recommend for the dressing? I would like something that doesn't harden when refrigerated.
