- 4 lb. rump roast (beef, fresh)
- 6 cups sliced onion (about 3 medium, cut into quarters)
- 2 Tbsp. paprika (preferable Hungarian sweet, though any will do)
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. dried thyme
- 3 garlic cloves (fresh)
- 1/2 cup water (natural spring water without chlorine tastes best)
- 2 Tbsp. red wine vinegar
- 1/2 cup dry red wine
- 14.25 oz. beef broth (low-sodium if desired)
- 1 lb. potatoes (6 to 10 red, Bliss, or another variety, cut and shaped to fit)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. carrots (*, can use baby carrots but may take a little longer)
- cooking spray (for the inside of your Dutch oven)
