- 1 Tbsp. nut butter (peanut, almond, etc.)

- 1/4 avocado
- 16 oz. chickpeas (drained and rinsed)
- 2 stalks celery (finely diced)
- 1 green onion (sliced thinly)
- 2 pickles (finely diced, optional)
- 1/2 cup vegan mayo (alternatively you can use 1 avocado mashed or ½ cup hummus)
- 1 Tbsp. Dijon mustard (grainy)
