- 1 lb. chicken
- 1 can fire-roasted diced tomatoes
- 1 can green chilies
- 1 can black beans
- 1 pkg. rice
- 1/2 onion (chopped)
- 1/2 tsp. cumin
- 1 tsp. oregano
- sour cream
- sauce (taco bell mild)

Directions
- Heat large pan on medium heat. Add chopped onions. Let cook for 3-5 min.
- Add chicken, oregano, cumin. Cook for 5 min one side. Flip. Add tomatoes, chilies. Bring to boil. Then simmer on med-low heat for 20 minutes. Mixing all ingredients well. Check chicken. Maybe flip once more to make sure they're done.
- Cook black beans per package instructions. Heat rice per package instructions.
- Combine in bowl. Add sour cream and mild sauce to top
