- 2 cups sugar
- 1 cup salad oil
- 4 eggs
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. canela
- 1 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. nutmeg
- 1 cup raisins (golden seedless)
- 3/4 cup chopped walnuts
- 3 cups carrots (grated)
- cream cheese frosting

Directions
- Cream sugar and oil.Add eggs and vanilla, mix well. Combine flour, cinnamon, baking soda, salt and nutmeg.
- Toss raisins and nuts w/ 2 tblsp dry ingredients. Stir remaining dry ingredients into creamed mixture, mix well.
- Fold in raisins, nuts and carrots. Pour into greased and floured 13x9 in. pan.
