- 100 grams strong white bread flour (/3½oz)
- 75 grams unsalted butter (/2½oz cold, cut into roughly 1cm/½in dice)
- 1/2 tsp. salt
- 100 grams lard (/3½oz, plus extra for greasing)
- 1 egg yolk (free-range, beaten, to glaze)

The only thing we did different was oven roast the rabbit, then transfered it to a pressure cooker, and then chopped it for the pie... it turned out excellent!
