- 1/2 cup almond meal (60 g)
- 1/2 cup muscovado (brown, dark sugar)
- 3 Tbsp. walnuts (chopped coarsely)
- 2 Tbsp. slivered almonds (chopped coarsely)
- 7 Tbsp. butter (room temperature but not soft)
- confectioner's sugar (to serve)
- 1 fennel bulb (finely sliced, use a mandoline)
- 4 radishes (pink, finely sliced, use a mandoline)
- 2 oz. soft goat cheese (fresh, crumbled)
- 1 Tbsp. chopped chives
