- 1/4 tsp. fine sea salt
- hot water (splash)
- 1/4 cup rice vinegar
- 2 medium carrots (scrubbed, cut into long matchsticks)
- 1 1/2 cups short grain sushi rice (white)
- 2 cups water (plus water for rinsing the rice)
- 1 1/2 Tbsp. sugar
- 1 1/2 tsp. fine sea salt
- 3 Tbsp. rice vinegar
- 12 oz. extra firm tofu (or firm, grated on the large holes of a box grater, 1 cup lightly packed)
- 1/4 cup mayonnaise (good, vegan if you like)
- 1 1/2 Tbsp. sriracha (more or less, to your taste)
- 1 tsp. ginger root (finely grated)
- 5 nori sheets
- 2 Persian cucumbers (small, seeded and sliced into long matchsticks)
- 2 cups pea sprouts (or other mild sprouts, rinsed and dried)
- 1 handful sesame seeds (lightly toasted)
- 4 scallions (green parts only, rinsed well and slivered)
- 1 cup watermelon radish (coarsely grated, or daikon radish, from 1-2 watermelon radishes or 1 daikon, peeled if skin is tough)
- 1 ripe avocado (large firm-, peeled, pitted, sliced lengthwise)
