- 1/2 tsp. sea salt
- 1/2 tsp. cumin
- 1/4 tsp. chili powder
- oil spray (optional)
- 3/4 cup cashews (soaked overnight if you don't have a high speed blender)
- 1/4 cup water (+ 2 tbsp)
- 2 Tbsp. lemon juice (or lime)
- 2 cloves garlic
- 1/4 tsp. salt
- 1 Tbsp. chipotle in adobo sauce (or adobo "juice" from a can or jar of chipotle in adobo)
- 1 Tbsp. tomato paste (optional, for orange color and added flavor)
- 2 Tbsp. nutritional yeast
- 1/2 cup brown lentils (or green dry)
- 1/2 small onion (finely diced)
- 2 cloves garlic (minced)
- 1 Tbsp. oil
- 1 1/2 cups vegetable broth
- 1/2 tsp. cumin
- 1/4 tsp. chipotle chili powder
- 1 watermelon radish (large)
- 1 cup Heirloom tomatoes (mini, halved)
- 1/2 cup cooked corn
- 1/2 cup cilantro leaves (chopped)
- 1 avocado
- 2 limes
- 1/2 tsp. sea salt
- pomegranate seeds (for topping, optional)
