How can you go wrong with a bitter greens and oranges? I made this to accompany a lentil stew and crusty bread. Soaked the radicchio in ice water and used a salad spinner. That extra step really toned down the bitterness (which some find off putting) but did soften the leaves a bit. If you like the bitterness and crunch of radicchio you can skip this step. The dressing is delicious and versatile. The honey adds balance. May try it with pomegranate vinegar next time.
