- 250 grams beetroot (trimmed baby, and baby golden beetroot)
- 3 cups chicken stock
- 2 tsp. mild curry powder
- 1 cup freekeh
- 1/4 cup lemon juice
- 3 tsp. honey
- 1/2 cup almonds (natural, toasted and chopped)
- 1/3 cup currants
- 1 cup chopped parsley
- 1/2 cup mint (chopped)
- 2 spring onions (green, finely sliced)
- 1 cup yoghurt (Greek-style)
- 1 Tbsp. preserved lemon (finely chopped)
- 1 clove garlic (crushed)
- 1/4 tsp. sweet paprika
