- 2 Tbsp. butter
- 1 small onion (finely chopped)
- 2 cloves garlic (finely chopped)
- 1/3 cup thin spaghetti (or long pieces broken regular)
- 1 cup long-grain white rice

- 1 tsp. smoked paprika
- 2 cups chicken stock
- 3/4 cup peas (freshly shelled, or frozen peas, thawed)
- 4 oz. pimientos (chopped, drained)
- 2 Tbsp. olive oil
- 2 lb. large shrimp (peeled, deveined, tails removed)
- 4 cloves garlic (crushed and chopped)
- 4 spring onions (whites and greens, cut on an angle into ½-inch slices, or 2 leeks, cut in half lengthwise, then crosswise into ½- inch half-moons)

- 1 tsp. crushed red pepper
- 1/4 cup sherry (or ½ cup white wine)
- 1 lemon (juiced, about ¼ cup)
- 4 Tbsp. butter (cut into pieces)
- 1/2 cup fresh flat leaf parsley (chopped)
