- 1 apple (large firm, such as Honeycrisp or Gala, peeled and diced)

- 1 tsp. cumin (ground or seed)
- 1 tsp. celery seed
- 1 tsp. caraway seeds (seed or ground)
- 1 Tbsp. paprika (palmful)
- 2 fresh bay leaves (large)
- 1 red cabbage (small, quartered, cored and very thinly sliced)
- 2 Tbsp. light brown sugar (such as Domino's Pourable)
- 2 Tbsp. sherry vinegar (or cider vinegar)
- 1 qt. vegetable stock (or chicken stock)
- 1 cup tomato sauce (from one 8-ounce can)
- 1 cup passata (from a 24-ounce jar)
- 1 cup cherry tomatoes (loosely packed sundried, or sundried tomatoes, coarsley chopped)
- 1 cup boiling water
- 2 Tbsp. wine vinegar (red or white)
- 2 cloves garlic (crushed)
- 1 tsp. dried lemon peel (or orange peel or a combination of both)
- 1/2 tsp. fennel seed
- 1/2 tsp. red pepper flakes
- 1/2 tsp. dried oregano
- 1/3 cup extra virgin olive oil (EVOO)
- 4 Tbsp. melted butter
- 8 slices wheat bread (or white)
- 8 slices muenster cheese (Swiss, or provolone cheese)
- 2 cups cress leaves (loosely packed Upland, or arugula)
- 1/2 cup fresh dill (parsley and chives)
