- 8 portobello mushroom caps (large or 12 medium, grilled, scrape under cap with a spoon, stemmed and sliced)
- 2 onions (large, thinly sliced, white or yellow)

- pepper
- 6 cloves garlic (chopped or grated)
- 2 Tbsp. thyme (chopped)
- 1/2 cup marsala wine
- 2 Tbsp. worcestershire (or vegetarian Worcestershire, Worcestershire contains a small amount of anchovy)
- 1 Tbsp. tamari (or shoyu, soy sauce)
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 cups milk
- cream cheese (One 3-ounce brick)
- 12 oz. provolone cheese (sack shredded and mozzarella cheese blend)
- 1 tsp. granulated garlic
- 4 sub rolls (large 10-12 inch Italian hoagie)
- giardiniera (drained and chopped or pulse processed)
- hot cherry pepper (Italian, rings)
