- 3 Tbsp. white vinegar
- 2 jalapeño peppers (finely chopped)
- 1 red onion (small or ½ medium, finely chopped)
- 1 clove garlic (grated or pasted)
- salt
- pepper
- 1 tsp. celery seed
- 4 cups shredded cabbage (or 1 sack store-bought pre-shredded slaw blend)
- 1/2 cup sour cream (or Greek yogurt)
- 3 Tbsp. buttermilk
- 2 Tbsp. hot sauce (cayenne pepper, Rach’s go-to is Frank’s RedHot)
- 1/4 cup herbs (chopped, parsley, chives and dill)
- 2 qt. frying oil (such as safflower or canola, 2-3 inches in Dutch oven or 2 quarts for tabletop)
- 1 1/2 cups all-purpose flour
- 1 tsp. cayenne pepper (½ palmful)
- 2 tsp. white pepper (2/3 palmful)
- 2 tsp. ground cumin (2/3 palmful)
- 2 tsp. paprika (2/3 palmful)
- salt (and pepper)
- 1 cup buttermilk
- 3 boneless skinless chicken breasts (4 to 6 portions, halved horizontally into 4-6 cutlets)
- sandwich buns (soft, and bread-and-butter pickles, to serve)
