- 2 lb. butternut squash (one large, peeled seeded and cut into 1'' pieces)
- 2 Tbsp. extra virgin olive oil

- 1 tsp. smoked paprika
- 1/2 tsp. sea salt
- grated nutmeg (bit of fresh)
- 10 oz. brown rice
- quinoa pasta
- noodle
- 2 handfuls baby spinach (or well chopped swiss chard)
- pesto (// pistachio)
- 2 cloves garlic
- zest
- juice
- 1/3 cup pistachio nuts (toasted, unsalted)
- 1 serrano (or jalepeno, seeded, I leave a few seeds for spice)
- 1 cup herbs (packed, a mix of any: cilantro, parsley, chives, basil)
- 1/3 cup grated Parmesan (or pecorino, plus more for garnish)
- 1/3 cup extra virgin olive oil
- water (splash of)

I love the recipe! 100% aproved by the whole family. The taste is great, and looks good also. I replaced the ingredients to make the pesto with a pre-made Basil pesto, and it worked fine. A tip to make it suitable for kids: Replace the Smoked Paprika with regular, so its not too spicy. :)
