- 1 onion (large, quartered and thinly sliced)
- 2 broccoli (large, crowns, cut into bite-sized pieces)
- 1/3 cup sun dried tomatoes (sliced, or sliced black olives)

- freshly ground pepper
- 1 1/2 cups vegan cheddar (grated, style cheese)
- Daiya cheddar (use your favorite brand; I like, style)
- shredded cheese (in this dish)
- 2 tomatoes (large or 3 medium, sliced)
