  • 1/4 cup shallots (finely chopped)
  • 1/4 cup fresh dill (chopped, or parsley)
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 3 cups cooked quinoa
  • 3 cups baby kale (or 3 cups chopped kale leaves)

    This was so great! Definitely going to be a reoccurring dish in MY house. Personally, I would add less salt since I'm usually light on the sodium.
