- 3/4 cup Hellmann’s or Best Foods Vegan Carefully Crafted Dressing and Sandwich Spread
- 1/4 cup shallots (finely chopped)
- 1/4 cup fresh dill (chopped, or parsley)
- 2 Tbsp. white balsamic vinegar
- 1 Tbsp. Dijon mustard
- 3 cups cooked quinoa
- 3 cups baby kale (or 3 cups chopped kale leaves)

Directions
- Combine Hellmann’s® or Best Foods® Carefully Crafted Dressing and Sandwich Spread, shallots, dill, vinegar and mustard in large bowl. Add quinoa and kale and toss to coat. Serve chilled or at room temperature.

I cooked my quinoa in mushroom broth. I didn’t have any white balsamic, so I subbed 1/2 balsamic and 1/2 rice vinegar. Added in sunflower seeds to each individual serving. I think it would’ve been good with a splash of lemon juice too, but it was really good!
