Soooo good - I substituted swiss chard for spinach, used red bell peppers, white onions, etc and this was soooooo delicious and satiating and now I want to make this for an Easter Appetizer (with smaller mushrooms) - yay - so excited - the nutritional yeast on top reminds me of parmesan but so much better for you!

I used a sundried tomato quinoa. The yeast was a bit much - in terms of the salty-level. I'd sub manchego cheese next time.
